Our story
KAI (海) means “sea” in Japanese. Everything we cook starts there.

KAI SUSHI is a fictional restaurant built to demonstrate an online ordering system. The approach, however, is real — it's how the best Japanese kitchens work.
Fish arrives chilled and is cut on the day it's served. We wash our rice in several waters, cook it in small batches and season it with our own vinegar blend.
Every roll is made after you order. Warm dishes travel in separate packaging, sauces in sealed containers, and a courier never carries more than two orders at once.
Produce is bought daily, nothing is prepared in advance.
Our chefs spend years mastering cutting and shaping.
Balance of taste, texture and temperature in every dish.
Even in delivery, food should look beautiful.

We love the Japanese idea of “itadakimasu” — gratitude for the food and for the people who made it. That's why our menu is short and every dish is deliberate.
